And once the hat’s made, here’s a fun recipe to get your kids into the kitchen and cooking with you. You’ll need to be ready to help at each stage – but they’ll be so pleased with the final results.
Mini Victoria Sponges
Ingredients:
100g butter
100g caster sugar
125g self-raising flour
2 eggs
200ml whipped cream
Jam to fill
Icing sugar for decoration
Method:
Preheat the oven to 180˚C.
Weigh out all the ingredients.
Line two flat baking trays with non-stick baking paper.
Mix the butter, sugar and flour into a large mixing bowl and add the eggs.
Beat with a whisk for 2 – 3 minutes until light and fluffy. You could use an electric whisk for ease.
Place teaspoon-sized blobs of cake mixture on your tray. You should be able to fit 12 of these sponge drops on each tray.
Bake for 5 minutes until the sponge drops are slightly brown and springy to touch. Leave to cool.
Whip the cream. When the sponge drops have cooled, put a blob of jam and cream onto half of them and then place another sponge drop on top.
Dust with icing sugar and serve.
